Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Filling
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x9 inch baking pan. Bake for 15 minutes.
Make the Filling
  1. In a separate bowl, combine chopped rhubarb, sugar, flour, eggs, vanilla extract, and salt. Mix well.
  2. Pour the filling over the pre-baked crust and spread evenly.
Bake the Bars
  1. Return the pan to the oven and bake for an additional 25 minutes, or until the filling is set.
  2. Remove from oven and let cool before slicing into bars.
