Ingredients
  

Pudding Base
  • 2 cups ripe mango puree fresh or canned
  • 1 cup coconut milk or heavy cream
  • 1/2 cup sugar adjust to taste
  • 1 tablespoon gelatin powder or agar-agar for a vegetarian option
  • 1/4 cup water for dissolving gelatin
  • 1 teaspoon vanilla extract

Method
 

Prepare the Gelatin
  1. In a small bowl, sprinkle the gelatin powder over the water and let it sit for 5 minutes to bloom.
Blend the Ingredients
  1. In a mixing bowl, combine the mango puree, coconut milk, sugar, and vanilla extract. Whisk until smooth.
Dissolve the Gelatin
  1. Heat the bloomed gelatin in a microwave for about 10-15 seconds until fully dissolved. Stir into the mango mixture.
Set the Pudding
  1. Pour the mixture into molds or serving cups. Refrigerate for at least 2 hours or until set.
Serve
  1. Once set, remove from the refrigerator, and serve chilled. Optionally, garnish with fresh mango slices or mint leaves.
