Method
Prepare the Gelatin
- In a small bowl, sprinkle the gelatin powder over the water and let it sit for 5 minutes to bloom.
Blend the Ingredients
- In a mixing bowl, combine the mango puree, coconut milk, sugar, and vanilla extract. Whisk until smooth.
Dissolve the Gelatin
- Heat the bloomed gelatin in a microwave for about 10-15 seconds until fully dissolved. Stir into the mango mixture.
Set the Pudding
- Pour the mixture into molds or serving cups. Refrigerate for at least 2 hours or until set.
Serve
- Once set, remove from the refrigerator, and serve chilled. Optionally, garnish with fresh mango slices or mint leaves.
