Prepare Sago
- Rinse the sago pearls under cold water until the water runs clear.
- In a saucepan, bring 2 cups of water to a boil. Add the sago pearls and cook for about 15 minutes, stirring occasionally, until they become translucent.
- Remove from heat, cover, and let sit for 10 minutes. Drain and rinse under cold water.
Make Pudding
- In a mixing bowl, combine the cooked sago pearls, coconut milk, and sugar. Mix well until the sugar is dissolved.
- Chill the mixture in the refrigerator for at least 30 minutes.
Prepare Mango Topping
- In a bowl, combine the diced mangoes with lime juice. Mix gently to combine.
Serve
- Spoon the chilled sago pudding into serving cups and top with the mango mixture.
- Serve immediately or keep chilled until ready to serve.
