Mango Sago Pudding Chilled

Ingredients
  

Sago Pudding Base
  • 1 cup sago pearls small tapioca pearls
  • 2 cups water for boiling sago
  • 1 can coconut milk full-fat for creaminess
  • 1/4 cup sugar adjust to taste
Mango Topping
  • 2 medium ripe mangoes peeled and diced
  • 1 tablespoon lime juice for freshness

Method
 

Prepare Sago
  1. Rinse the sago pearls under cold water until the water runs clear.
  2. In a saucepan, bring 2 cups of water to a boil. Add the sago pearls and cook for about 15 minutes, stirring occasionally, until they become translucent.
  3. Remove from heat, cover, and let sit for 10 minutes. Drain and rinse under cold water.
Make Pudding
  1. In a mixing bowl, combine the cooked sago pearls, coconut milk, and sugar. Mix well until the sugar is dissolved.
  2. Chill the mixture in the refrigerator for at least 30 minutes.
Prepare Mango Topping
  1. In a bowl, combine the diced mangoes with lime juice. Mix gently to combine.
Serve
  1. Spoon the chilled sago pudding into serving cups and top with the mango mixture.
  2. Serve immediately or keep chilled until ready to serve.

Notes
