Ingredients
  

For the Marinade
  • 4 fillets salmon skinless
  • 1 cup mango diced
  • 1 tablespoon habanero pepper finely chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For Serving
  • 1 cup cooked rice optional
  • 1 tablespoon cilantro chopped, for garnish

Method
 

Marinate the Salmon
  1. In a mixing bowl, combine diced mango, habanero pepper, lime juice, olive oil, salt, and black pepper.
  2. Add the salmon fillets to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
Grill the Salmon
  1. Preheat the grill to medium-high heat.
  2. Remove the salmon from the marinade and place on the grill. Cook for about 6-8 minutes per side or until the salmon is cooked through and flakes easily with a fork.
Serve
  1. Serve the grilled salmon over a bed of cooked rice, garnished with chopped cilantro and additional mango if desired.
