Prepare the Coffee Rub
- In a mixing bowl, combine ground coffee, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.
Prepare the Steak
- Pat the strip steaks dry with paper towels. Use a meat mallet to gently pound the steaks to an even thickness.
- Rub the coffee mixture generously over both sides of the steaks. Let them sit at room temperature for 15 minutes.
Grill the Steaks
- Preheat the grill to high heat. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
- Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.
Rest and Serve
- Remove the steaks from the grill and let them rest for 5 minutes before slicing. Serve with your favorite sides.
