- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the cookie dough into a greased muffin tin, filling each cup about halfway.
- Place a pineapple ring and a maraschino cherry on top of each cookie.
- Sprinkle brown sugar over the pineapple rings.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool slightly before removing from the pan.
