Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pineapple rings fresh or canned
  • 1/4 cup brown sugar
  • 4 maraschino cherries

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spoon the cookie dough into a greased muffin tin, filling each cup about halfway.
  7. Place a pineapple ring and a maraschino cherry on top of each cookie.
  8. Sprinkle brown sugar over the pineapple rings.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow to cool slightly before removing from the pan.
