Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup crushed pineapple drained
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and crushed pineapple.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the pan on a wire rack.
Frosting Preparation
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
  3. Once the cake is completely cooled, spread the cream cheese frosting evenly over the top.
