No Bake Peach Cheesecake Cups

Ingredients
  

Crust
  • 1 cup Graham cracker crumbs
  • 3 tablespoons Sugar
  • 5 tablespoons Unsalted butter, melted
Cheesecake Filling
  • 8 ounces Cream cheese, softened
  • 1/2 cup Powdered sugar
  • 1 cup Heavy cream Whipped to soft peaks
  • 1 teaspoon Vanilla extract
Topping
  • 2 cups Fresh peaches, diced Can substitute with canned peaches
  • 1 tablespoon Sugar Optional, to sweeten peaches

Method
 

Prepare the crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Divide the mixture evenly among serving cups and press down to form a crust.
Make the cheesecake filling
  1. In a clean mixing bowl, beat the softened cream cheese and powdered sugar until smooth.
  2. Gently fold in the whipped heavy cream and vanilla extract until fully combined.
Assemble the cups
  1. Spoon the cheesecake filling over the crust in each cup.
  2. Top with diced peaches. If desired, sprinkle with sugar to sweeten the peaches.
Chill and serve
  1. Refrigerate the cups for at least 2 hours before serving to allow the filling to set.
  2. Serve chilled and enjoy!

Notes
