Ingredients
  

For the Strawberry Filling
  • 2 cups fresh strawberries sliced
  • 2 tablespoons granulated sugar for macerating strawberries
For the Whipped Cream
  • 1 cup heavy cream chilled
  • 2 tablespoons powdered sugar adjust to taste
  • 1 teaspoon vanilla extract
For the Shortcake Base
  • 1 cup shortbread cookies crumbled
  • 2 tablespoons unsalted butter melted

Method
 

Prepare the Strawberries
  1. In a mixing bowl, combine sliced strawberries and granulated sugar. Toss gently and let sit for about 10 minutes to release juices.
Make the Whipped Cream
  1. In another bowl, whisk together chilled heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Prepare the Shortcake Base
  1. In a bowl, mix crumbled shortbread cookies with melted butter until well combined.
Assemble the Cups
  1. In serving cups, layer the shortcake base, followed by the macerated strawberries, and top with whipped cream. Repeat layers as desired.
Chill and Serve
  1. Refrigerate the assembled cups for at least 30 minutes before serving to allow flavors to meld.
