  • 6 large eggs
  • 3 large egg yolks
  • 2 tablespoons vanilla extract
  • 1 loaf French bread, cut into 8 slices
  • 6 tablespoons unsalted butter
  • 1 cup light brown sugar, packed
  • 1/3 cup light corn syrup
  • 1/4 cup maple syrup
  • 1 cup pecans, chopped

Method
 

  1. In a large bowl, whisk together the milk, cream, eggs, egg yolks, and vanilla extract.

  3. In a small saucepan, melt the butter with brown sugar, corn syrup, and maple syrup over medium heat. Stir until combined and bubbly.
  4. Pour the butter mixture over the soaked bread. Sprinkle chopped pecans on top.
  5. Cover the dish with plastic wrap and refrigerate overnight.
  6. The next morning, preheat the oven to 350°F (175°C) and bake the French toast uncovered for 35 minutes until golden and set.
