- In a food processor, combine the thawed peas, feta cheese, olive oil, lemon juice, and minced garlic.
- Blend until smooth and creamy, scraping down the sides as needed.
- Add the chopped parsley and mint, and pulse a few times to combine.
- Season with salt and pepper to taste, and blend again if necessary.
- Transfer the dip to a serving bowl and drizzle with additional olive oil if desired.
