  • 2 cups fresh or frozen peas
  • 4 oz pancetta diced
  • 2 medium shallots sliced
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1 tbsp fresh mint chopped, for garnish

Method
 

Cooking Steps
  1. In a skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Remove and set aside, leaving the fat in the skillet.
  2. In the same skillet, add olive oil and sliced shallots. Sauté until shallots are caramelized, about 3-4 minutes.
  3. Add the peas to the skillet and cook for an additional 3-5 minutes until heated through. Season with salt and black pepper.
  4. Return the crispy pancetta to the skillet and mix well. Remove from heat.
  5. Garnish with chopped fresh mint before serving.
