Ingredients
  

Salad Base
  • 2 large cucumbers sliced thinly
  • 1 cup carrots julienned
  • 1 cup red bell pepper sliced
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon chili garlic sauce
Topping
  • 1/4 cup peanut chili crisp store-bought or homemade

Method
 

Prepare the Salad
  1. In a mixing bowl, combine sliced cucumbers, julienned carrots, sliced red bell pepper, and chopped cilantro.
Make the Dressing
  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and chili garlic sauce until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly. Top with peanut chili crisp before serving.
