Method
Prepare the Topping
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix the brown sugar with the pineapple rings until well coated.
- Place the pineapple rings on the prepared baking sheet and place a maraschino cherry in the center of each ring.
Make the Cookie Dough
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assemble and Bake
- Scoop tablespoon-sized portions of the cookie dough and place them on top of the pineapple rings.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool for a few minutes before carefully flipping the cookies upside down onto a serving plate.
