Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Topping
  • 1 cup pineapple rings canned or fresh
  • 1/2 cup brown sugar packed
  • 8 pieces maraschino cherries

Method
 

Prepare the Topping
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix the brown sugar with the pineapple rings until well coated.
  3. Place the pineapple rings on the prepared baking sheet and place a maraschino cherry in the center of each ring.
Make the Cookie Dough
  1. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assemble and Bake
  1. Scoop tablespoon-sized portions of the cookie dough and place them on top of the pineapple rings.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Allow to cool for a few minutes before carefully flipping the cookies upside down onto a serving plate.
