  • 1 lb ground beef 80/20 blend recommended
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz can
  • 1 cup bell pepper chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar cheese shredded
Toppings
  • 1 cup sour cream
  • 1 cup lettuce shredded
  • 1 cup tomato diced

Method
 

Cooking the Beef
  1. In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula.
  2. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, bell pepper, cumin, chili powder, salt, and black pepper. Simmer for 10 minutes.
Serving
  1. Spoon the beef mixture into serving bowls.
  2. Top with shredded cheddar cheese, sour cream, lettuce, and diced tomatoes.
