Prepare the Rhubarb BBQ Sauce
- In a saucepan, combine chopped rhubarb, ketchup, brown sugar, apple cider vinegar, soy sauce, garlic powder, onion powder, black pepper, and salt.
- Cook over medium heat, stirring occasionally, until the rhubarb breaks down and the sauce thickens, about 15 minutes.
Prepare the Chicken
- Preheat the grill to medium-high heat.
- Season the chicken thighs with salt and pepper.
Grill the Chicken
- Place the chicken thighs skin-side down on the grill and cook for 6-7 minutes.
- Flip the chicken and brush generously with the rhubarb BBQ sauce.
- Continue grilling for another 6-7 minutes, brushing with more sauce, until the internal temperature reaches 165°F (75°C).
Serve
- Remove the chicken from the grill and let it rest for a few minutes before serving.
- Serve with additional rhubarb BBQ sauce on the side.
