Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
Rhubarb BBQ Sauce
  • 2 cups rhubarb chopped
  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Method
 

Prepare the Rhubarb BBQ Sauce
  1. In a saucepan, combine chopped rhubarb, ketchup, brown sugar, apple cider vinegar, soy sauce, garlic powder, onion powder, black pepper, and salt.
  2. Cook over medium heat, stirring occasionally, until the rhubarb breaks down and the sauce thickens, about 15 minutes.
Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken thighs with salt and pepper.
Grill the Chicken
  1. Place the chicken thighs skin-side down on the grill and cook for 6-7 minutes.
  2. Flip the chicken and brush generously with the rhubarb BBQ sauce.
  3. Continue grilling for another 6-7 minutes, brushing with more sauce, until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for a few minutes before serving.
  2. Serve with additional rhubarb BBQ sauce on the side.
