Method
Prepare the crust
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
- Press the mixture into the bottom of a greased 9x9 inch baking pan.
- Bake for 15 minutes or until lightly golden.
Make the filling
- In another bowl, combine chopped rhubarb, sugar, flour, vanilla, eggs, and salt. Mix well until combined.
- Pour the filling over the baked crust.
- Bake for an additional 25 minutes or until the filling is set.
Cool and serve
- Allow the bars to cool completely in the pan before cutting into squares.
- Serve chilled or at room temperature.
