Prepare the Filling
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the chopped rhubarb, sugar, and cornstarch. Mix well.
- Spread the rhubarb mixture evenly in the bottom of a greased 9x13 inch baking dish.
Prepare the Topping
- In a separate bowl, combine the yellow cake mix, melted butter, and water. Stir until just combined.
- Pour the cake batter over the rhubarb filling, spreading it evenly.
- Do not stir; the batter will rise during baking.
Bake
- Bake in the preheated oven for 45 minutes or until the top is golden brown and the rhubarb is bubbly.
- Let cool slightly before serving. Enjoy warm or at room temperature.
