Rhubarb Dump Cake

Ingredients
  

Filling
  • 4 cups rhubarb, chopped fresh or frozen
  • 1 cup sugar adjust based on tartness of rhubarb
  • 1 tablespoon cornstarch for thickening
Topping
  • 1 box yellow cake mix dry mix only
  • 1 cup butter melted
  • 1 cup water

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the chopped rhubarb, sugar, and cornstarch. Mix well.
  3. Spread the rhubarb mixture evenly in the bottom of a greased 9x13 inch baking dish.
Prepare the Topping
  1. In a separate bowl, combine the yellow cake mix, melted butter, and water. Stir until just combined.
  2. Pour the cake batter over the rhubarb filling, spreading it evenly.
  3. Do not stir; the batter will rise during baking.
Bake
  1. Bake in the preheated oven for 45 minutes or until the top is golden brown and the rhubarb is bubbly.
  2. Let cool slightly before serving. Enjoy warm or at room temperature.
