Ingredients
  

Fish
  • 1 lb white fish fillets such as cod or tilapia
  • 1 tbsp olive oil for cooking
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground ginger
Rhubarb Ginger Salsa
  • 1 cup rhubarb chopped
  • 1 tbsp fresh ginger grated
  • 1 tbsp honey
  • 1 tbsp lime juice freshly squeezed
  • 1/4 cup red onion finely chopped
  • 1 tbsp cilantro chopped
Taco Assembly
  • 8 small corn tortillas
  • 1 avocado sliced
  • 1 lime cut into wedges

Method
 

Prepare the Fish
  1. Season the fish fillets with olive oil, salt, black pepper, and ground ginger.
  2. Heat a skillet over medium heat and cook the fish for about 3-4 minutes on each side until flaky.
Make the Rhubarb Ginger Salsa
  1. In a mixing bowl, combine chopped rhubarb, grated ginger, honey, lime juice, red onion, and cilantro.
  2. Mix well and set aside to let the flavors meld.
Assemble the Tacos
  1. Warm the corn tortillas in a dry skillet or microwave.
  2. Place a portion of flaky fish on each tortilla, top with rhubarb ginger salsa, and add avocado slices.
  3. Serve with lime wedges on the side.
