Ingredients
  

  • 8 cups mixed greens
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1/2 cup red onion
  • 1 cup feta cheese
  • 1/2 cup balsamic vinaigrette
  • 12 ounces pasta
  • 1 cup bell peppers
  • 1 cup black olives
  • 1 cup mozzarella cheese
  • 1/2 cup Italian dressing
  • 1 cup quinoa
  • 2 cups water
  • 1 cup corn
  • 1 cup black beans
  • 1 cup cilantro
  • 1/4 cup lime juice

Equipment

Method
 

  1. Cook quinoa in 2 cups of water until done, then set aside.
  2. Cook pasta according to package instructions, then drain and set aside.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, balsamic vinaigrette, bell peppers, black olives, mozzarella cheese, Italian dressing, corn, black beans, cilantro, and lime juice.
  4. Gently toss all ingredients together until evenly mixed.
  5. Serve chilled or at room temperature.
