Ingredients
  

Kielbasa and Vegetables
  • 1 lb kielbasa sliced into 1/4 inch rounds
  • 2 cups baby potatoes halved
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 tbsp olive oil for drizzling
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved baby potatoes, sliced bell pepper, and onion.
  3. Drizzle with olive oil and season with garlic powder, smoked paprika, oregano, salt, and black pepper. Toss to coat evenly.
Assembly
  1. Spread the seasoned vegetables evenly on a sheet pan.
  2. Arrange the sliced kielbasa on top of the vegetables.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the kielbasa is browned.
  2. Remove from the oven and let cool for a few minutes before serving.
