Ingredients
  

Shrimp Filling
  • 1 lb shrimp peeled and deveined
  • 1 cup cheddar cheese shredded
  • 1 cup cream cheese softened
  • 1 cup green onions chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
Enchilada Sauce
  • 2 cups red enchilada sauce store-bought or homemade
Tortillas
  • 8 pieces corn tortillas

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shrimp, cheddar cheese, cream cheese, green onions, garlic powder, cumin, salt, and pepper. Mix well.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Warm the tortillas in a skillet until pliable. Spoon the shrimp filling onto each tortilla and roll them up tightly.
  3. Place the rolled tortillas seam-side down in a baking dish.
  4. Pour the enchilada sauce over the top, ensuring all tortillas are covered.
  5. Sprinkle additional cheese on top if desired.
Bake
  1. Bake in the preheated oven for 20-25 minutes, until heated through and cheese is bubbly.
