Sicilian Watermelon Pudding

Ingredients
  

Watermelon Base
  • 4 cups watermelon seedless, cubed
  • 1/2 cup sugar adjust based on sweetness of watermelon
  • 1 tablespoon lemon juice freshly squeezed
Thickening Agent
  • 1 tablespoon gelatin unflavored
  • 1/4 cup cold water
Creamy Layer
  • 1 cup heavy cream whipped
  • 1/2 cup mascarpone cheese

Method
 

Prepare Watermelon Base
  1. Blend the watermelon cubes until smooth, then strain the mixture to remove pulp.
  2. In a mixing bowl, combine the strained watermelon juice, sugar, and lemon juice. Stir until the sugar is dissolved.
Prepare Gelatin
  1. In a small bowl, sprinkle gelatin over cold water and let it sit for about 5 minutes to bloom.
  2. Heat the bloomed gelatin in the microwave for about 10 seconds until dissolved, then mix it into the watermelon mixture.
Combine Creamy Layer
  1. In another bowl, gently fold the whipped cream and mascarpone cheese together until smooth.
  2. Carefully fold the creamy mixture into the watermelon mixture until well combined.
Chill and Serve
  1. Pour the pudding into serving dishes and refrigerate for at least 2 hours until set.
  2. Serve chilled, optionally garnished with mint leaves or additional watermelon pieces.

Notes

For a vegan version, substitute gelatin with agar-agar and use coconut cream instead of heavy cream.
