Ingredients
  

Pudding Base
  • 4 cups watermelon seedless, cubed
  • 1 cup coconut milk full-fat for creaminess
  • 1/4 cup sugar adjust to taste
  • 2 tablespoons gelatin or agar-agar for a vegetarian option
  • 1/4 cup water for dissolving gelatin
  • 1 teaspoon vanilla extract
Garnish
  • 1/4 cup mint leaves fresh, for garnish
  • 1 cup watermelon cubed, for topping

Method
 

Prepare the Pudding
  1. Blend the watermelon in a blender until smooth.
  2. In a small bowl, combine gelatin with water and let it sit for 5 minutes to bloom.
  3. In a saucepan over low heat, dissolve the bloomed gelatin until fully melted.
  4. In a mixing bowl, combine the blended watermelon, coconut milk, sugar, melted gelatin, and vanilla extract. Mix well.
  5. Strain the mixture through a fine-mesh sieve to remove any pulp.
  6. Pour the strained mixture into serving dishes and refrigerate for at least 2 hours until set.
Serve
  1. Once set, top the pudding with fresh watermelon cubes and mint leaves before serving.
