Prepare the Pudding
- Blend the watermelon in a blender until smooth.
- In a small bowl, combine gelatin with water and let it sit for 5 minutes to bloom.
- In a saucepan over low heat, dissolve the bloomed gelatin until fully melted.
- In a mixing bowl, combine the blended watermelon, coconut milk, sugar, melted gelatin, and vanilla extract. Mix well.
- Strain the mixture through a fine-mesh sieve to remove any pulp.
- Pour the strained mixture into serving dishes and refrigerate for at least 2 hours until set.
Serve
- Once set, top the pudding with fresh watermelon cubes and mint leaves before serving.
