Ingredients
  

Chicken Filling
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup salsa your choice of mild or spicy
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Taco Toppings
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro chopped

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the slow cooker.
  2. Add salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine the ingredients.
Cook the Chicken
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
Shred the Chicken
  1. Once cooked, shred the chicken using two forks and mix it with the sauce in the slow cooker.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet or microwave.
  2. Fill each tortilla with shredded chicken and top with lettuce, tomatoes, cheese, sour cream, and cilantro.
