Ingredients
  

Chicken and Vegetables
  • 2 cups cooked chicken breast, shredded can use rotisserie chicken
  • 1 large cucumber, thinly sliced
  • 1 cup red bell pepper, thinly sliced
  • 1 cup carrots, shredded
Dressing
  • 3 tablespoons soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon honey optional for sweetness
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Chicken
  1. If using raw chicken, grill or pan-cook the chicken breast until fully cooked, then shred it.
Mix the Salad
  1. In a large mixing bowl, combine the shredded chicken, cucumber, red bell pepper, and carrots.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sriracha, and honey until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly. Garnish with sesame seeds before serving.
