Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
Topping
  • 1 cup fresh strawberries sliced
  • 2 tablespoons granulated sugar for macerating

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes and then set aside to cool.
Make the filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add sugar and vanilla extract, mixing until well combined. Add eggs one at a time, mixing well after each addition. Finally, mix in the sour cream.
  3. Pour the filling over the cooled crust and smooth the top with a spatula.
  4. Bake for 20 minutes or until the center is set. Remove from the oven and let cool to room temperature.
Prepare the topping
  1. In a small bowl, combine sliced strawberries with granulated sugar. Let sit for about 10 minutes to macerate.
  2. Once the cheesecake is cooled, top with the macerated strawberries before slicing into bars.
