Method
Prepare the crust
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes and then set aside to cool.
Make the filling
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add sugar and vanilla extract, mixing until well combined. Add eggs one at a time, mixing well after each addition. Finally, mix in the sour cream.
- Pour the filling over the cooled crust and smooth the top with a spatula.
- Bake for 20 minutes or until the center is set. Remove from the oven and let cool to room temperature.
Prepare the topping
- In a small bowl, combine sliced strawberries with granulated sugar. Let sit for about 10 minutes to macerate.
- Once the cheesecake is cooled, top with the macerated strawberries before slicing into bars.
