  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
Topping
  • 2 cups fresh strawberries sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

  • 1 cup strawberry cereal
  • 2 tablespoons butter melted

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted butter. Press mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add 1/2 cup sour cream, 1/2 cup granulated sugar, and 1 teaspoon vanilla extract. Mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 1 hour, then turn off the oven and let the cheesecake cool in the oven for 1 hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for 2 hours.
  8. In a separate bowl, combine sliced strawberries, 1/4 cup granulated sugar, and lemon juice. Stir well and let it sit for 10 minutes.
  9. In another bowl, mix strawberry cereal with 2 tablespoons melted butter.
  10. Once the cheesecake is chilled, top it with the strawberry mixture and sprinkle with the strawberry cereal.
