Preparation
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted butter. Press mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Add 1/2 cup sour cream, 1/2 cup granulated sugar, and 1 teaspoon vanilla extract. Mix until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 1 hour, then turn off the oven and let the cheesecake cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for 2 hours.
- In a separate bowl, combine sliced strawberries, 1/4 cup granulated sugar, and lemon juice. Stir well and let it sit for 10 minutes.
- In another bowl, mix strawberry cereal with 2 tablespoons melted butter.
- Once the cheesecake is chilled, top it with the strawberry mixture and sprinkle with the strawberry cereal.
