Ingredients
  

Crust and Topping
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
Filling
  • 2 cups fresh strawberries chopped
  • 2 cups fresh rhubarb chopped
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust and Topping
  1. Preheat the oven to 350°F (175°C). Grease the baking pan.
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly.
  3. Stir in rolled oats. Reserve half of the mixture for topping.
  4. Press the remaining mixture into the bottom of the prepared baking pan.
Prepare the Filling
  1. In another bowl, combine strawberries, rhubarb, sugar, cornstarch, vanilla extract, and lemon juice.
  2. Spread the filling evenly over the crust in the baking pan.
  3. Sprinkle the reserved crumb mixture over the filling.
Bake
  1. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
  2. Allow to cool completely before cutting into bars.
