Ingredients
  

For the Chicken
  • 1 lb chicken breast boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Street Corn
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp lime juice
  • 1 tbsp cilantro chopped
For the Rice Bowl
  • 2 cups cooked rice white or brown
  • 1 cup black beans cooked
  • 1 avocado sliced
  • 1 lime wedges

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper.
  3. Rub the spice mixture over the chicken breasts.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Let it rest before slicing.
Prepare the Street Corn
  1. Grill the corn until charred, about 10 minutes. Remove kernels from the cob.
  2. In a bowl, combine grilled corn, mayonnaise, cotija cheese, lime juice, and cilantro. Mix well.
Assemble the Rice Bowl
  1. In a serving bowl, layer cooked rice, black beans, sliced avocado, and grilled chicken.
  2. Top with the street corn mixture and serve with lime wedges.
