Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts grilled and sliced
  • 2 tbsp olive oil for grilling
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
For the Street Corn
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise for dressing
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp cilantro chopped
For the Rice Bowl
  • 2 cups cooked rice white or brown
  • 1 cup black beans cooked and drained
  • 1 avocado sliced
  • 1 cup salsa for topping

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  3. Coat the chicken breasts with the spice mixture and grill for 6-7 minutes on each side until fully cooked.
  4. Remove from grill, let rest for a few minutes, and then slice.
Prepare the Street Corn
  1. Grill the corn until charred, about 10 minutes, turning occasionally.
  2. Once cool, remove the kernels from the cob and mix with mayonnaise, cotija cheese, lime juice, and cilantro.
Assemble the Rice Bowl
  1. In a bowl, layer the cooked rice, black beans, grilled chicken, and street corn mixture.
  2. Top with sliced avocado and salsa.
  3. Serve immediately and enjoy!
