Method
Prepare the Dough
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assemble the Cookies
- Using a cookie scoop, take a portion of dough and flatten it in your hand.
- Place a spoonful of the filling in the center, then fold the dough over to seal it.
- Place the stuffed cookie on the prepared baking sheet.
- Repeat with the remaining dough and filling.
Bake
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
