Ingredients
  

Stuffing
  • 4 medium Bell Peppers Any color
  • 1 cup Cooked Rice White or brown
  • 1 lb Ground Beef Or turkey for a lighter option
  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 tsp Italian Seasoning
  • 1 tsp Salt To taste
  • 1/2 tsp Black Pepper To taste
  • 1 cup Cheddar Cheese Shredded, for topping

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, cook the chopped onion and minced garlic until softened.
  4. Add the ground beef to the skillet and cook until browned. Drain excess fat.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
Stuffing and Baking
  1. Stuff each bell pepper with the meat and rice mixture.
  2. Place the stuffed peppers in a baking dish and cover with foil.
  3. Bake in the preheated oven for 25 minutes.
  4. Remove the foil, sprinkle cheddar cheese on top of each pepper, and bake for an additional 5 minutes, or until cheese is melted.
  5. Let cool for a few minutes before serving.
