Ingredients
  

Wet Ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
Mix Wet Ingredients
  1. In a mixing bowl, combine the pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract. Whisk until smooth.
Combine Dry Ingredients
  1. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Bake
  1. Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
