  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 packet taco seasoning
  • 2 cups tortilla chips crushed
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for topping
  • 1 cup salsa for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add black beans, corn, and taco seasoning to the skillet. Stir to combine and heat through.
  4. In a baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, and half of the cheese. Repeat the layers.
  5. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  6. Remove from the oven and let cool for a few minutes. Serve topped with sour cream and salsa.
