Tacos al Pastor are a traditional Mexican dish made with marinated pork, pineapple, and fresh toppings, served in soft corn tortillas.

Ingredients
  

For the Marinade
  • 2 lbs pork shoulder cut into thin slices
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 3 tbsp adobo sauce from canned chipotle peppers
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup pineapple fresh, diced for topping
For Serving
  • 12 pieces corn tortillas warmed
  • 1 cup onion finely chopped
  • 1 cup cilantro chopped
  • 1 cup lime wedges
  • 1 cup salsa for serving

Method
 

Marinate the Pork
  1. In a blender, combine orange juice, pineapple juice, adobo sauce, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.
  2. Place the pork slices in a large bowl and pour the marinade over them. Cover and refrigerate for at least 4 hours, preferably overnight.
Cook the Pork
  1. Preheat the grill to medium-high heat. Remove the pork from the marinade and discard the marinade.
  2. Grill the pork slices for about 5-7 minutes on each side, or until cooked through and slightly charred.
  3. Let the pork rest for a few minutes before slicing it into small pieces.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Place a portion of the grilled pork on each tortilla, top with diced pineapple, chopped onion, and cilantro.
  3. Serve with lime wedges and salsa on the side.

Notes

For an authentic flavor, consider using a vertical spit (trompo) for cooking the pork, similar to traditional methods.
