Ingredients
  

Chicken Marinade
  • 1 lb boneless chicken thighs cut into 1-inch pieces
  • 1/2 cup teriyaki sauce store-bought or homemade
  • 2 tbsp honey for sweetness
  • 1 tbsp soy sauce optional for extra flavor
  • 1 tbsp sesame oil for added richness
Vegetables
  • 1 bell pepper red cut into chunks
  • 1 bell pepper green cut into chunks
  • 1 cup red onion cut into chunks
  • 1 cup zucchini sliced

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine the teriyaki sauce, honey, soy sauce, and sesame oil. Add the chicken pieces and stir to coat. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Kebabs
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with extra teriyaki sauce if desired.
