- In a mixing bowl, combine olive oil, lemon juice, garlic powder, paprika, cumin, salt, and black pepper to create the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
Grilling
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
