Ingredients
  

Chicken Marinade
  • 1 pound Boneless, skinless chicken breasts Cut into 1-inch cubes
  • 1/4 cup Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 2 teaspoons Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Bell peppers Cut into 1-inch pieces
  • 1 cup Red onion Cut into 1-inch pieces

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, lemon juice, garlic powder, paprika, cumin, salt, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables.
  3. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  4. Remove from the grill and let rest for a few minutes before serving.
