  • 1/2 cup vegan butter softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh lemon juice
  • 1/4 cup coconut cream chilled
  • 1/4 cup maple syrup
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix all-purpose flour, vegan butter, powdered sugar, salt, and vanilla extract until combined to form a dough.
  3. Roll out the dough and cut into desired shapes.
  4. Place the cut-out cookies on a baking sheet and bake for 15 minutes or until lightly golden.
  5. For the lemon curd, combine fresh lemon juice, coconut cream, maple syrup, cornstarch, and lemon zest in a saucepan.
  6. Cook over medium heat, stirring constantly until thickened.
  7. Allow the lemon curd to cool before filling the cookies.
  8. Assemble the cookies by sandwiching the lemon curd between two shortbread cookies.
