Ingredients
  

Watermelon Layer
  • 1 large watermelon seedless
Frosting
  • 2 cups heavy whipping cream chilled
  • 1/4 cup powdered sugar adjust to taste
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/4 cup mint leaves for garnish

Method
 

Prepare Watermelon
  1. Cut the watermelon into thick round slices, about 1-2 inches thick.
  2. Trim the edges to create a cake-like shape if desired.
Make Whipped Cream
  1. In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
  2. Whisk until soft peaks form.
Assemble the Cake
  1. Place one watermelon slice on a serving platter.
  2. Spread a layer of whipped cream on top.
  3. Add another watermelon slice on top and repeat the process until all slices are stacked.
  4. Cover the entire cake with the remaining whipped cream.
Garnish
  1. Top the cake with mixed berries and mint leaves for decoration.
  2. Chill in the refrigerator for at least 30 minutes before serving.
