  • 2 cups cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled
  • 1 tablespoon fresh mint chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the diced watermelon, cucumber, red onion, feta cheese, and fresh mint.
  2. In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
