Ingredients
  

Base Ingredients
  • 4 cups watermelon, cubed seedless
  • 1 cup ripe tomatoes, chopped
  • 1 small cucumber, peeled and chopped
  • 1/4 cup red onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Garnish
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese, crumbled optional

Method
 

Preparation
  1. In a blender, combine the watermelon, tomatoes, cucumber, red onion, garlic, olive oil, red wine vinegar, salt, and black pepper.
  2. Blend until smooth and well combined. Adjust seasoning if necessary.
  3. Chill in the refrigerator for at least 30 minutes before serving.
  4. Serve in bowls and garnish with fresh basil and feta cheese if desired.
