Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup watermelon puree pureed fresh watermelon
  • 1/2 cup chocolate chips for seeds
Frosting
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon green food coloring optional

Method
 

Make the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and watermelon puree until combined.
  5. In a separate bowl, whisk together the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the chocolate chips.
  8. Roll the dough out on a floured surface and use a cookie cutter to cut out watermelon slice shapes.
  9. Place the cookies on a baking sheet and bake for 12-15 minutes or until lightly golden.
  10. Allow cookies to cool completely on a wire rack.
Prepare the Frosting
  1. In a bowl, mix the powdered sugar and milk until smooth.
  2. Add green food coloring if desired to achieve a green hue.
  3. Spread the frosting on top of the cooled cookies.
