Ingredients
  

Burger Patties
  • 2 cups Zucchini, grated Excess moisture squeezed out
  • 1 cup Cooked quinoa For added protein
  • 1 large Egg To bind the mixture
  • 1 cup Breadcrumbs Panko or regular
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Olive oil For cooking
Toppings
  • 4 slices Cheese Cheddar or your choice
  • 4 buns Burger buns Whole grain or regular
  • 1 cup Lettuce Shredded
  • 1 tomato Tomato, sliced
  • 1/2 cup Pickles Sliced
  • 1/4 cup Ketchup
  • 1/4 cup Mustard

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine grated zucchini, cooked quinoa, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form Patties
  1. Divide the mixture into 4 equal portions and form into patties.
Cook the Patties
  1. Heat olive oil on a griddle over medium heat. Place the patties on the griddle and cook for about 4-5 minutes on each side, until golden brown and cooked through.
Add Cheese
  1. In the last minute of cooking, place a slice of cheese on each patty and cover to melt.
Assemble the Burgers
  1. Place each patty on a bun and top with lettuce, tomato, pickles, ketchup, and mustard. Serve immediately.
