Prepare the Mixture
- In a mixing bowl, combine grated zucchini, cooked quinoa, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form Patties
- Divide the mixture into 4 equal portions and form into patties.
Cook the Patties
- Heat olive oil on a griddle over medium heat. Place the patties on the griddle and cook for about 4-5 minutes on each side, until golden brown and cooked through.
Add Cheese
- In the last minute of cooking, place a slice of cheese on each patty and cover to melt.
Assemble the Burgers
- Place each patty on a bun and top with lettuce, tomato, pickles, ketchup, and mustard. Serve immediately.
